Rooted in the rich culinary heritage of Nepal, the restaurant specializes in authentic Nepalese dishes, signature momos , traditional Nepali curries, tandoori preparations, and Indo-Chinese fusion items. The employer is seeking two experienced cooks with demonstrated expertise in authentic Nepalese cuisine to join its kitchen team. MINIMUM REQUIREMENTS Language: English Education: Secondary (high) school graduation certificate Experience: 1 year to less than 2 years in a commercial kitchen, with direct experience preparing Nepalese or Himalayan cuisine WORK CONDITIONS AND PHYSICAL DEMANDS Fast-paced restaurant environment Ability to stand for extended periods during service High attention to detail in food preparation and presentation Ability to work in a hot kitchen environment PERSONAL SUITABILITY Sound judgement in food safety and quality decisions Well-organized and dependable Flexible and reliable under varying workloads Collaborative team player SPECIFIC DUTIES AND RESPONSIBILITIES The successful candidates will be responsible for preparing and cooking authentic Nepalese dishes central to Momo Factory's menu. Specific duties include: Momo Preparation: Prepare and hand-knead dough from scratch using all-purpose flour, ensuring proper texture and thickness for wrapper production at volume. Prepare and season a variety of momo fillings including chicken (with cabbage, onion, spring onion, coriander, ginger, garlic, cumin, coriander powder, and black pepper), vegetable, paneer, goat, and shrimp varieties according to standardized recipes. Accurately portion, shape, and pleat momos by hand, maintaining consistent presentation across all varieties. Cook momos using steaming, deep-frying, and pan-frying methods, monitoring cooking times and temperatures for food safety and quality. Prepare signature momo styles including Jhol Momo (dipped in special sauce), Chilly Momo, Pan-fried Momo, Sandheko Momo, Szechuan Momo, Kurkure Momo, Garlic Momo (steamed), and Tandoori Momo (fried), adjusting preparation techniques for each style. Prepare accompanying traditional Nepali chutneys, dipping sauces, and achar (e.g., tomato-sesame chutney, spicy chili sauce, garlic sauce) from scratch. Nepali Appetizers and Street Food: Prepare Chatpate, a traditional Nepalese street snack made with puffed rice, dried noodles, fresh coriander, tomato, onion, lemon juice, fresh chili, and Nepali spices, balancing flavour profile as per the restaurant's recipe. Prepare Crispy Pakora using gramflour batter seasoned with Nepalese spices, ajwain, and chilli powder, in paneer, chicken, fish, and shrimp variations. Prepare Nepalese-spiced Creamy Fries using a tomato-cream sauce and Nepalese spice blend. Prepare Veg Kurkure using flour, bell pepper, cabbage, cauliflower, sweet and sour sauce, and seasoning. Prepare Lollipop Chicken using fried wings, soya sauce, ginger, garlic, and Nepali spice marinade. Prepare Old Chicken (Chicken 65) using yoghurt, flour, chilies, coconut milk, curry leaves, mustard, and green onion; and the equivalent Old Gobhi (cauliflower) and Old Soya Chaap versions. Prepare Crispy Honey Chilli Garlic items (potato, chicken, soya chaap, fish, or shrimp) with chilli paste, chilli powder, garlic, and sesame seeds. Nepali Curries and Main Dishes (Machha-Masu): Prepare authentic Nepali curries using traditional Nepalese spice blends, fresh ginger, garlic, and various proteins; serve with fragrant basmati rice or freshly baked naan. Prepare Shahi Paneer using cottage cheese in a rich tomato, ginger-garlic, and fenugreek gravy finished with cream and butter, in accordance with the menu recipe. Cook complete Indo-Nepali main dishes maintaining consistency in flavour, spice level, and presentation across service. Prepare curry-based dishes using lemongrass, coconut milk, ginger, and garlic as per menu specifications. Tandoor and Grilled Items: Marinate and prepare Tandoori Chicken using a yoghurt, ginger, garlic, lemon, and spice marinade, and cook in a tandoor oven; prepare both whole and half portions. Prepare Seekh Kebab by mincing and charbroiling goat meat with garlic, ginger, and mint to achieve proper texture and flavour. Soups and Other Items: Prepare soups including Lemon Basil Soup (beans, carrots, broccoli, lemon zest, basil, ginger, garlic, salt, and pepper) and other menu items as required. Prepare Chocolate Momo Dessert by deep-frying chocolate-filled momos and plating with vanilla ice cream and chocolate sauce. General Kitchen Responsibilities: Follow daily production schedules to meet service volume requirements. Monitor all cooking times and temperatures in compliance with BC food safety regulations. Maintain consistency in portion size, flavour, and plate presentation across all menu items. Ensure all ingredients are fresh and meet quality standards before use; report and manage shortages in inventory. Operate and maintain kitchen equipment including steamers, mixers, grinders, tandoor oven, and fryers. Maintain cleanliness and sanitation of workstations in accordance with WorkSafeBC and FOODSAFE requirements. Train and supervise kitchen helpers in the preparation, cooking, and handling of Nepalese food items. Collaborate with team members to ensure efficient production flow during service periods. Plan menu items and assist in managing inventory of food supplies and equipment. WORK SETTING Restaurant full-service Nepalese and Indo-Chinese fusion kitchen.
